Simple Lemon Vinaigrette

This vinaigrette is about as simple as it gets. It only has three ingredients and all you have to do is shake a jar to combine them. I frequently just add lemon juice and olive oil directly to my salad ingredients, but sometimes it can be nice to have it mixed up ahead of time. I like to have this to put on salads that I take for lunch or if I’m bringing a salad somewhere and want to be able to dress it quickly before we eat.

Croutons

Croutons

Homemade croutons are a fun and favorite addition of mine for salads, soups, and snacks. I like to keep an eye on the discount shelf at the back of my grocery store and pick up a stale loaf of bread to use for croutons when I see one. If you don’t have stale bread, it’s fine to use fresh, but they may take a minute or two longer to bake. The texture of sandwich bread doesn’t work well for these so I like to keep a loaf of bread handy in the freezer. Homemade croutons are easy and always worth the couple minutes it takes to make them!

Hard Boiled Eggs

Hard Boiled Eggs

Hard boiled eggs make a great addition to salads and sandwiches and are a great snack on their own. There are a lot of different ways you can hard boil an egg and lots of people have tips and tricks they swear by, but this is the method I’ve found that works most consistently for me. You can cook as many eggs as will fit in a single layer at a time. Eggshells are porous and the longer they’re able to sit in the ice water, the easier they’ll be to peel.

Granola

Granola

This granola is a staple for us and we try to keep some on hand, especially when people are visiting. It isn’t too sweet and is healthy enough that I don’t think twice about eating it for breakfast. I particularly love eating it with plain yogurt, any fresh fruit we have on hand, and a drizzle of honey. It’s also great just to snack on or to eat as cereal.

Cheesy Bruschetta Toasts

Cheesy Bruschetta Toasts

These are a delicious appetizer and if you’re not careful (speaking from direct experience here) can quickly turn into a whole meal on its own. Fresh, fragrant tomatoes are important – use the nicest ones you can get your hands on. These are best washed down with a glass of red wine.

For a more traditional bruschetta, leave off the cheese. However like most things, these are better with cheese.

Corn Avocado and Black Bean Tacos

Corn is hard for me to resist in the summer. I can’t help snagging an ear or two every time I’m at the store and they tend to make their way into most of our summertime meals. These tacos are a favorite of mine. The fresh corn and jalapeno make this a fresh and delicious summer meal. This recipe is also easy to scale up if if you’re feeding more than two.
