Backpacking Smoked Salmon and Caper Roll Up

A note about Bramble & Spice Backpacking Recipes: These recipes are intended for one or two night backpacking trips. I like eating real food when I’m hiking and I’m always willing to carry a little extra weight in order to eat well. Everything really does taste better in the mountains.

These smoked salmon roll ups make a delicious lunch or an easy dinner if arriving late to camp. The roll ups are nice and compact and are easy to eat on the go.

Chicken Tortilla Soup

Chicken Tortilla Soup

This soup is one of our favorites. The tortillas blended into the soup give the broth an added dimension and the chipotle in adobo adds a subtle but pleasant heat. If your heat tolerance is low, use less or if you want a spicier soup, use more. Make sure that you are pulling out a chipotle pepper to use and not just scooping up the adobo sauce (although the sauce is delicious, it won’t provide much heat).

Tortilla Chips

Tortilla Chips

Homemade tortilla chips are a fun addition to any salsa, guacamole, or soup. These are simple, come together fast, and are always fun to eat. Aleppo, cumin, and salt are my favorite toppings and I’ve included some suggested measurements for one full tray of chips. The customizable nature of chips is part of what makes them so fun, so don’t be afraid to toss them with your favorite spices.

The most important thing when baking chips is to make sure they aren’t crowded on the pan. I usually do two or three rounds of baking to ensure they have plenty of space. Chips that are overcrowded bake unevenly, so it’s worth it to take the time to space them out.
