Tortilla Chips

Homemade tortilla chips are a fun addition to any salsa, guacamole, or soup. These are simple, come together fast, and are always fun to eat. Aleppo, cumin, and salt are my favorite toppings and I’ve included some suggested measurements for one full tray of chips. The customizable nature of chips is part of what makes them so fun, so don’t be afraid to toss them with your favorite spices.

The most important thing when baking chips is to make sure they aren’t crowded on the pan. I usually do two or three rounds of baking to ensure they have plenty of space. Chips that are overcrowded bake unevenly, so it’s worth it to take the time to space them out.

Cheesy Bruschetta Toasts

Cheesy Bruschetta Toasts

These are a delicious appetizer and if you’re not careful (speaking from direct experience here) can quickly turn into a whole meal on its own. Fresh, fragrant tomatoes are important – use the nicest ones you can get your hands on. These are best washed down with a glass of red wine.

For a more traditional bruschetta, leave off the cheese. However like most things, these are better with cheese.

Mango Salsa

Mango Salsa

I made this salsa on one of the first sunny and semi-warm days this spring. After a little yard work, we felt ourselves entitled to a snack. In the time it took us to bake up some chips (see how to do that here), we had a bowl of salsa waiting. This salsa is perfect for a hot summer day, or just any day you’re wishing was sunshine-filled.

Mango is definitely the dominant flavor here, so feel free to play with the amounts of the other ingredients if you want a more dominant lime or heat component.
