Granola

This granola is a staple for us and we try to keep some on hand, especially when people are visiting. It isn’t too sweet and is healthy enough that I don’t think twice about eating it for breakfast. I particularly love eating it with plain yogurt, any fresh fruit we have on hand, and a drizzle of honey. It’s also great just to snack on or to eat as cereal.  

Granola

1 cup walnuts, roughly chopped

1 cup pecans, roughly chopped

3 cups rolled oats

1 cup wheat germ (wheat bran also works here)

1 tsp cinnamon

½ tsp cardamom

1 tsp salt

1/3 cup honey

¼ cup maple syrup

3 T vegetable oil

Preheat the oven to 275°. In a large bowl, combine the walnuts, pecans, oats, wheat germ, spices, and salt. In a small pan on the stove or in the microwave, heat the honey, syrup, and oil until they can be cohesively mixed. Pour the mixture over the nuts and grains. Stir everything together until no dry sections remain and everything has been coated with the honey mixture. It may seem too dry at first, like there’s not enough of the honey mixture, but keep mixing and everything will end up coated.

On a parchment-lined baking sheet, spread the granola out as evenly as possible, filling the whole sheet. Bake for 50-55 minutes, until nicely toasted. There is no need to stir the granola as it bakes. As it cools, the granola will crisp up. Once completely cool, transfer to an airtight container.
